Most modern cookware today is aluminum based and finished with synthetic nonstick coatings. Aluminum conducts heat quickly, which is why it has become so popular in modern kitchens. However, bare aluminum can react with acidic foods, so manufacturers apply chemical coatings to create a protective nonstick surface.
The problem is that many of these coatings degrade when exposed to high heat, and once scratched, the underlying metal becomes exposed. These pans are built for convenience, not longevity. They work, but they are not timeless, and they are certainly not ancestral. Convenience often carries a hidden price that shows up later down the road.

What was designed for convenience starts to break down under real heat and real use. When the surface scratches, the integrity of the pan changes and so does what touches your food.
Stainless steel is a more neutral choice. It’s durable and it doesn’t chip. It doesn’t rely on chemical coatings. And when used properly with fat and correct heat, it can perform beautifully.
But it requires technique! I can’t tell you how many times I’ve heard people like themselves out Without proper preheating and fat use, food sticks easily. For many people, that frustration pushes them back toward synthetic nonstick options. Stainless steel is solid…..but it’s still modern industrial refinement!

Stainless steel delivers clean, even heat when used with proper technique and real fat. It is a durable modern option that rewards patience and precision in the kitchen.
Cast iron is different. It’s made from iron ore — a mineral forged in stars, embedded in the earth, and present in your own bloodstream! Iron is not foreign to your biology. In fact, it’s foundational! Iron is central to hemoglobin, the protein that transports oxygen through your blood. Without adequate iron, energy drops, recovery suffers, and oxygen delivery declines.
When you cook in cast iron, small amounts of non-heme iron can transfer into your food! This is amplified when cooking meat or acidic ingredients. It’s is mineral contact from the earth into your meal!

Fire, iron, and butter working together the way humans have cooked for generations. This is how you build flavor, retain heat, and honor the minerals that fuel your body.
The Primal Takeaway
Cast iron works best when paired with real, stable fats. Butter, ghee, tallow, and coconut oil protect the surface, enhance flavor, and remain structurally sound under high heat. Unlike refined seed oils that oxidize and break down, these traditional fats support both the pan and your physiology. When fat bonds with iron through proper seasoning, it creates a naturally nonstick surface without synthetic coatings. Fire, iron, and fat form a cooking partnership that humans have relied on for generations.
Iron plays a central role in hemoglobin, the protein responsible for transporting oxygen throughout your bloodstream. When you cook with cast iron, small amounts of dietary iron can transfer into your food, contributing to your overall intake! It is not a replacement for nutrient dense animal protein, but it is a meaningful connection between the minerals of the earth and the biology of your body.
If you are intentional about what you eat, be intentional about what you cook on! Choose tools that come from nature and that improve with age instead of degrading over time. Cast iron is durable, simple, and aligned with how humans have prepared food for centuries. Bring iron back into your kitchen and let your cooking reflect the same ancestral principles that guide the rest of your life. Keep it primal!
